Buffalo Chicken Meatballs

Ingredients

  • 1 Pound Ground Chicken
  • 3/4 Cup Bread Crumbs
  • 1 Large Egg
  • 1 Tablespoon Chives, plus more for garnish
  • 1/2 teaspoon Cayenne Pepper 
  • Pinch of Kosher Salt and Black Pepper 
  • 5 Tablespoons Butter, melted
  • 7 Tablespoons Frank's Red Hot
  • 1 teaspoon Worcestershire Sauce
  • 1/2 teaspoon Garlic Powder
  • Blue Cheese Dressing and Additional Hot Sauce for Dipping

Directions

  • Preheat the oven to 400 degrees F.  Line a cookie sheet with parchment paper or a silicone mat
  • Mix together ground chicken, bread crumbs, egg, chives, cayenne pepper, salt, and pepper in a medium bowl
  • Bake in the oven for 5 minutes to firm the meatballs, then transfer to a slow cooker pot
  • In a medium bowl, whisk together melted butter, hot sauce, Worchestershire sauce, and garlic powder.  Pour over meatballs
  • Place the lid on the slow cooker, and cook the meatballs on low for at least 2 hours
  • Serve with additional hot sauce and blue cheese for dipping
