Basic Chicken Brine

Ingredients

  • 3 Cups Whole Milk
  • 3 Tablespoons White Vinegar
  • 2-1/2 Tablespoons Hot Sauce
  • 2-1/2 Teaspoons Garlic Powder 
  • Additional herbs and spices to taste

Directions

  • In a large container, add milk and vinegar.  Allow to set until milk begins to curdle, about 5 to 10 minutes.
  • Add hot sauce, garlic powder, and additional herbs and spices.  Whisk until thoroughly mixed.
  • Thoroughly rinse chicken and place it into the brine, ensuring the meat is completely covered.  
  • Place lid on container and store in the refrigerator for 4 to 24 hours.
