Slow Cooked Chicken Cacciatore

Ingredients

  • 2  Pounds Skin-On, Bone-In Chicken Thighs
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 2 Bell Peppers, chopped
  • 8 Ounces Baby Bella Mushrooms, sliced
  • 2 Cloves Garlic, minced
  • 1 (28 Ounces) Can Crushed Tomatoes
  • 1/2 Cup Chicken Broth
  • 1 teaspoon Dried Oregano
  • 1/4 teaspoon Red Pepper Flakes 
  • 8 Ounces Linguine, cooked 

Directions

  • Season chicken on both sides with salt and pepper and place in the slow cooker.
  • Add peppers, mushrooms, garlic, tomatoes, and broth, then season with oregano, red pepper flakes, salt, and pepper. 
  • Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until chicken is cooked through. 
  • Remove chicken from the slow-cooker and stir capers into the sauce. Serve chicken over cooked pasta with sauce.
