Corn Salsa

Ingredients

  • 2 (15 Ounce) Cans Sweet Corn, rinsed and drained
  • 1/2 Red Onion, diced
  • 2 Jalapeños, thinly sliced and roughly diced
  • 1 Ripe Avocado, pit removed and diced
  • 1/4 Cup Fresh Basil, chopped
  • 1/4 Cup Fresh Cilantro, chopped
  • 2 Limes, juiced
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Kosher Salt

Directions

  • Mix all the ingredients together in a medium-sized bowl. 
  • Cover and refrigerate until you are ready to use.  
  • You can use 4 ears of fresh corn in place of the 2 cans of corn.  Simply boil the corn for about 3 minutes, cool, and remove the kernels.
