Ingredients
- 2 (15 Ounce) Cans Sweet Corn, rinsed and drained
- 1/2 Red Onion, diced
- 2 Jalapeños, thinly sliced and roughly diced
- 1 Ripe Avocado, pit removed and diced
- 1/4 Cup Fresh Basil, chopped
- 1/4 Cup Fresh Cilantro, chopped
- 2 Limes, juiced
- 1 Tablespoon Olive Oil
- 1 teaspoon Kosher Salt
Directions
- Mix all the ingredients together in a medium-sized bowl.
- Cover and refrigerate until you are ready to use.
- You can use 4 ears of fresh corn in place of the 2 cans of corn. Simply boil the corn for about 3 minutes, cool, and remove the kernels.
