Aunt Dorothy’s Lime Pickles

Ingredients

  • 7 Pounds Cucumbers, sliced
  • 3 Cups Pickling Lime
  • 2 Gallons Cold Water

Syrup

 

  • 5 Pounds Sugar
  • 2 Quarts Vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Whole Cloves
  • 1 teaspoon Allspice
  • 1 teaspoon Celery Seed
  • 1 Cinnamon Stick

Directions

  • Combine sliced cucumbers, pickling lim, and cold water
  • Let stand for 24 hours
  • Drain and soak in clear cold water for 4 hours, changing the water every hour
  • Combine all the syrup ingredients in a large pot
  • Bring to a boil
  • Pour over pickles and let stand overnight
  • The next morning, simmer for one hour and then can
