Ingredients
- 1 Pound Lean Ground Beef
- 1 Small Onion, chopped
- 1 teaspoon Garlic, minced
- 1/2 teaspoon Oregano
- 1/2 teaspoon Cumin
- 1 (14 Ounce) Can Chili Beans, drained
- 1 (16 Ounce) Jar Chunky Salsa
- 1/3 Cup Cotija Cheese
- 12 Fajita Tortillas
- 2 Cups Cheddar-Jack
- 3 Green Onions, chopped
- Sour Cream and Salsa for Topping
Directions
- Preheat oven to 350 degrees F. Grease a 9x13-inch glass dish
- Cook the ground beef and onion over medium heat until no longer pink. Drain off excess fat
- Add in garlic, oregano, cumin, and beans. Heat for another 5 minutes
- Stir in salsa and cheese until heated through
- Spoon just shy of 1/4 cup into a Fajita shell. Roll up tightly and place seam down into prepared dish
- Sprinkle Cheddar-Jack cheese and green onions over the top of the burritos. Cover with foil and bake for 20 minutes
- Remove foil and bake for an additional 10 minutes
- Serve with additional salsa and sour cream
