Ingredients

  • 1 Pound Whitefish, rinsed and dried
  • 1 teaspoon Ground Coriander
  • 1-1/2 teaspoon Smoked Paprika
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Ground Black Pepper
  • 1/2 teaspoon Ground Cayenne

Directions

  • Mix the spices in a small bowl.
  • Liberally apply the spice mixture to all sides of the fish.
  • Heat the grill to medium-high heat.  Spray the grill grate with grilling cooking spray.
  • When the grill is ready, lightly drizzle olive oil over the fish.
  • Grill each side until lightly charred, about 4 minutes per side.
  • You can substitute the whitefish for shrimp.  Simply toss the shrimp in the spice mixture, skewer, and grill for about 2 or 3 minutes per side or until the shrimp turn a light pink color.
