Cajun Ham and Bean Soup

Ingredients

  • 1 Pkg Hurst’s® HamBeens® 15 Bean Soup®
  • 8 Cups Low Sodium Chicken Stock
  • 1 or 2 Ham Hocks
  • 2 Cups Smoked Ham or Andouille Sausage, diced
  • 1 Onion, diced
  • 6 Cloves Garlic. minced
  • 1 ts[ Chili Powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Dried Thyme
  • 1 tsp Smoked Paprika
  • 1 15 oz Can Diced Tomatoes
  • 1 Lemon, juiced
  • Optional: Hot Sauce or Crushed Red Pepper to Taste

Directions

  • Rinse beans and drain. Sort any unwanted debris and set the seasoning packet aside.
  • Place beans, onions, ham bone, diced ham, broth/water, garlic, and chili powder in a 6qt slow cooker.
  • Cook on high for 5 hours (or low for 7-8) or until beans are tender.
  • Once tender, remove the hambone chop any meat left on the bone, and add it back to the pot.
  • Stir in diced tomatoes, Ham Flavor packet, and lemon juice.
  • Cook for an additional 30 minutes.
